I made this sandwich today and it was SOOOO good.
Ingredients
4 La Brea Bakery Ciabatta Sandwich Rolls (can substitute any La Brea Bakery artisan rolls)
1 1-lb piece flank steak
3 medium onions, ½-inch-thick slices
8 ounces large shiitake mushrooms, washed, stems removed
Kosher salt, to taste
Freshly cracked black pepper, to taste
For the Horseradish Mayo
½ cup mayonnaise
¼ cup prepared white horseradish
Kosher salt, to taste
Freshly cracked black pepper, to taste
In a small bowl, combine the mayonnaise and horseradish. Season with salt and pepper.
Pat the steak dry and season both sides well with salt and pepper. Preheat the outdoor grill with all the burners set to high heat with the lid down until very hot, 10-15 minutes. Grill the steak, with the lid down, until well seared and dark brown on one side, about 4-6 minutes. Flip the steak; continue grilling on the other side, 2-5 minutes more for rare or medium rare. Transfer the meat to a cutting board; cover it loosely with foil and let it rest for 5 minutes. Slice the steak very thinly on the bias against the grain.
Brush the mushrooms and the onions with olive oil. Season with salt and pepper. Add the onions and mushrooms to the outdoor grill along with the steak. Grill the mushrooms until cooked through, about 2-3 minutes per side. Grill the onion slices until just about tender, about 4 minutes per side. Transfer the mushrooms and onions to a cutting board. Slice the mushrooms thinly.
Slice the sandwich rolls in half, lengthwise. Generously spread each side of the rolls with the mayonnaise mixture. Divide the steak among the rolls. Top with the grilled onions and mushrooms. Cover the sandwiches with the top half of the rolls.
Slice the Petite Baguettes in half lengthwise. Place the sausages, onions and peppers onto the bottom half of the bread. If desired, sprinkle on the Parmesan cheese before covering the sandwich with the top half of the bread.
For best results, heat the sandwiches in the oven at 375°F for 10 minutes for all of the flavors to combine.

Valentines Day 2010
Our Valentine weekend seemed never ending. Saturday the 13th is when we decided to celebrate. Peter wanted to make dinner for us, which was fine with me. I'll save my shrimp linguine recipe for another time. Antoinette and I went to get our hair cut that day, while Peter shopped and prepared for the evening meal. He set the table and lit the candles to set the ambiance. (ambience?)
He prepared steamed crab legs, filet mignon and brussell sprouts w/bacon. 
Antoinette chose to have orange chicken and fried rice instead of our yummy meal. We had a great dinner together and shared memories with each other. After dinner I got a massage on the lambskin rug near the fireplace..Aaahhhhhh it was nice!
Our love and marriage has been so strong thanks to us doing our best to be obedient to God!

Busy Holiday Season 2009
Happy New Year 2010! Today is our first day back to work after being off almost 2 weeks. How I love our company's year end shut down! I'm thinking we'll lose it in the coming years. Anyhow, we had a great Holiday Season.
Dec. 5th we went to a friend from church's 40th birthday party. It was 1960's themed.
Everyone dressed up and looked great!!
Dec 11th Peter and I went to Disneyland. We love seeing the
Christmas decorations and the lit up castle. It was gloomy and rainy that day, but that kept the crowds away. We had fun
Dec 12th Peter and I went to friends Jill and hubby's house for a holiday get together. THE
FOOD WAS GREAT!! Most of it made by our friend Stephanie. SHE ROCKS!
Dec 16th we planned on Christmas Caroling with our church group, but it took us 2 HOURS to get home! We got to the Senior Home right when it ended, and got to sing a few last songs in the lobby, with the group. BETTER LATE THAN NEVER!
Dec 20th we had our yearly get together with our friends Yolanda & Judy and their families.
We've been doing this get together for MANY years! I always look forward to it. We're all having a swell time, then in walks Santa! Everyone was very surprised that Santa was there. It was
even a bigger surprise to the girls to see who DRESSED AS SANTA...Alfonso! He did a great job! Ho Ho Ho-ing....his pants even fell down during the belly shaking. Natalie & Antoinette did a dance to the Jackson 5's Rockin Robin

Dec 24th we spent Christmas Eve with my family. We had fun doing our White Elephant
Gift exchange. Kathy got a groovy pair of mens 'red' shoes, which she's already trying to pass on. Antoinette and Natalie did their Rockin'Robin dance for us all.
Dec 25th we went to spend some time with Peter's Mom and Marja & Ron's house. She loved the electric blanket we got her for her lap while she watches TV.
Dec 26th we caught a 7am flight to San Francisco. We flew out of Long Beach airport, which is literally 5 minutes from our house. We got to SF, then drove to Chinatown to walk around then to my friend Jennifer's son Kurt's 1st BD party. Food was great!
Party
was nice! There were about 400 guests! Afterward we headed toward the Golden Gate Bridge. Luckily the sun was out a little bit..so we got some great shots. It got colder as the afternoon wore off. Over that weekend we met Jennifer and family at the Disney Family Museum and for dinner for El Salvadorean food. The Pupusa's are really good!! We also went to the Coit tower, Lombard Streed (crooked St.), Pier 39, California Academy of Sciences Museum and
drove around alot seeing the sites. We came home on Dec. 29th.
Dec 30th we took our yearly Metro train ride from Redondo Beach to Olver
a St. and Universal City Walk. It was very cold and rained a little bit that day. About 19 of us went and had a great time! (Droste's, Llamas, Hunius and families)
Dec 31 I had an 8:45 am Dr. appt! NO SLEEP FOR THE WEARY! That night we went to our friends Yolanda and Todd's home for a New Years Celebration. We had fun singing Karaoke and hanging out. Appetizers and sweets were really good.
We got to bed about 2:30 a.m New Years Day.
Jan 1-- Got up at 9am to get ready to go to my parents to have Menudo. We stayed there most of the day visiting.
I finally got to sleep in on Jan 2nd. Just chilled at home all day.
Today's Jan 4th, first day back to work. Back to my tele-working schedule of getting off work at 2pm to go pick up Antoinette, then working from home a few hours.
It's been a BUSY month!

God's Gift
When I first heard the gospel news,
It was revealed to me,
Why Jesus Christ came to this earth,
To die to set us free.
I'd like to share this news with you,
Why the Lord Jesus came,
So you can have this free gift too,
When you call upon his name.
I was told how in the beginning,
That the enemy of God,
Tricked Adam and Eve into eating,
Of the fruit that God forbid.
They disobeyed the sovereign Lord,
But not without a cost,
Through them sin came into the world,
Separating mankind from God.
But God so loved the world,
He gave Jesus, his only Son,
For no one can come to the Father,
Unless they come through him.
Led like a lamb to the slaughter,
To the cross at Calvary,
Blameless and pure, he paid our price,
When he died for you and me.
On that cruel cross he died in pain,
They laid him in a tomb,
But three days later, just like he said,
He rose to life again!
Oh, death where is your sting?
He showed the world that day,
In Christ we serve a risen Lord,
Who's alive in every way.
So be careful of false teachers,
So that you're not misled,
Their faith is not in Jesus Christ,
But in men who are long dead.
You may live a life of kindness,
Without Jesus, but this I've learned,
Good deeds lead not to salvation,
It's God's gift that cannot be earned.
Some say they have not sinned at all,
But if they read God's Word,
It says for all have sinned and fall
Short of the glory of God.
So take the gospel to your heart,
With God you always win,
Ask Jesus Christ to rule your life,
Confess all things to him.
When you realize the sacrifice
God made because he cares,
Get on your knees and tell the Lord,
These words in humble prayer.
Lord, Jesus I am a sinner,
I'm so sorry for my ways,
Thank you for dying for my sin,
Come into my life today.
If you should do this precious thing,
All angels will rejoice,
In heaven you have eternal life,
Because Jesus was your choice.
May his bright light shine out through you,
May it shine far and wide,
Showing others how their lives could be,
With Jesus by their side.
Please share your faith with others,
As someone did with me,
So they will know how to decide,
Where they'll spend eternity.

End of year 2009
It's December again! This year surely flew by! Didn't it?
Here's my year in a nutshell.
My hubby had his 1 year birthday of being a Christian in January.
I hit one year also in February. We've had a great year of growing closer to God and are gonna work even harder next year to create that close relationship. We also developed such great relationships with our friends from church. We love spending time together.
In February we went on our yearly ski trip to Bear Mountain. Antoinette took her Adapted Ski lesson and Peter and I rented ski's and enjoyed the slopes. It was a beautiful sunny day. We enjoy going up there on the charter bus with Ability First's group of disabled kids. It's an experience!! We're going again in Feb 2010!
In March i went with about 10 gals to Las Vegas for the yearly Bunco Championship Tournament! We had a blast! None of won in the tournament or in Vegas but we had a greaat time. The cancelled the event in 2010! Well, it'll be in Florida now, not Vegas.
Early in the year we started planning our parents 50th Wedding Anniversary. It was held May 2, 2009 and it turned out really nice. We had it at Acapulco restaurant in the Long Beach Marina. They renewed their vows then followed a sit down dinner. It was a great evening surrounded by all their family and friends. It surely was a special day for all of us. For my birthday Peter took me to Ojai for the weekend. It's a beautiful little town. We walked around town, shopped at the Farmers Market, had some nice dinners and visited the Olive Oil ranch. We got a tour of the grounds and the machinery they uses to press the olives. It was a wonderful weekend! My neice Natalie made her First Holy Communion and still in the month of May my neice Monica graduated from Cal State Dominquez Hills with her bachelors degree, majoring in History. It was a very proud proud moment for all of us. Her parents had her a nice Graduation party the following weekend. During the summer we kept busy with graduation parties, church events, Bunco nights, PV Street Fair, Hermosa fair later in the summer, going to see neices and nephews perform in plays.In July we went on our yearly summer trip to Big Bear with the Huniu clan. We always have a great time relaxing at the Grey Squirrel Resort. The following weekend Peter, myself, my Dad, Theresa and Steve drove out to Palmdale to go see the B-2 Bomber! It's MASSIVE!
Awesome! I really got a thrill out of seeing it.
Peter and I joined our friends Evelyn & Mike on a Newport Beach Harbor boat cruise. It was really nice! We had dinner on the boat and enjoying the top deck and the cool ocean breeze. We later went inside to dance the night away.
August was a busy month. It started off wit a weekend camping at Leo Carillo State Park with an awesome group of friends from church. We really enjoyed the whole weekend!! On the Sunday we left the campground, we were driving off and i looked at my cell phone and said to Peter "Today's our annivesary!!" It totally slipped our mind, we were having such a great time...AND my cell phone died out so I didn't see what date it was. The following weekend we enjoyed a nice dinner together at the Fish Company in Los Alamitos. Ok, the following weekend in August I went to Palm Springs with Theresa, Kathy, Yvonne, Judy and Julie H. It was a belated birthday treat from Yvonne to Theresa and I. We spent some time in town window shopping, had a nice mexican dinner with Margaritas. We spent the whole day Saturday at the hotel pool having a great time!! The water slide was fun! The bar and food there was good! One of my friends had a bit too much to drink and took a induced nap the whole afternoon. On our drive home we stopped at the Outlet stores to shop. We got some cute jewelry at the Brighton store! The next day after we got home we left on our 5 day cruise to Mexico: Cabo San Lucas and Ensenada. We went with the Huniu family and really enjoyed the whole cruise experience. In Cabo we went on a snorkeling party boat. It's so beautiful out there! Ensenada was OK.. we walked in town, had lunch shopped and headed back to the ship. September was busy with BBQ's and Antoinette starting back to school at Cypress College. She was studying the Bible off and on throughout the year and in October she was ready to accept Christ into her life. She was baptized on October 4th, 2009. It was a great baptism in the ocean at Belmont Shore in Long Beach, followed by a small get together at our home. In October Peter and I started to lead a Small Group with our Church. We meet every Wednesday at our home with 2 other couples for a bible study.
It's been a good experience so far, getting to know the couples in our new City Group and forming new relationships. Closing up the year with many get togethers and good times with family and friends.
